Peanut Chicken Salad

Ingredients

For the Sauce

  • ½ C Peanut Butter, creamy
  • 3 T Soy Sauce
  • 2 T Brown Sugar
  • 2 T Rice Wine Vinegar
  • 2 Cloves Garlic, minced
  • 2 T Ginger, fresh, finely minced
  • 1 T Siracha
  • 6 T Water, warm

Remaining Ingredients

  • Rotisserie Chicken, shredded
  • 2 Romaine Hearts, sliced
  • 1/4 C Sliced or Slivered Almonds
  • 1/2 C Matchstick Carrots
  • 4 Green Onions, Sliced
  • 1/4 C Chopped Cilantro

Instructions

  • In a blender, blend all sauce ingredients until fully combined.
  • In a large bowl add all remaining ingredients and about half of the sauce.
  • Toss everything together.
  • Continue to add sauce to your liking and toss.

Notes

  • The sky is the limit on what you can add to this salad. For instance:
    • Diced red, yellow or orange bell pepper
    • Broccoli Slaw
    • Snow Peas
    • Bean Sprouts
    • Sliced Cucumber
    • Replace the shredded cabbage with Bok Choy

Well, this is my husband’s doing. He would go on a health kick and would ask me make the Peanut Chicken Noodle Bowl into a salad for him and skip the pasta. Turns out, it was delicious. He now requests a little pasta in the salad, a quick cook ramen noodle (go as cheap or fancy as you want on this one) or add cooked linguine or spaghetti. This really is the time to express yourself in salad form. Ok, that was weirdly worded, but I stand by it.
