
Ingredients
- 1 bunch Curly Kale, remove ribs and chop
- 2 Hearts of Romaine, chopped
- ½ med Red Onion, thinly sliced
- English Cucumber, diced
- 2 C Quinoa, precooked or cooked per package directions.
- 1 C Feta Crumbles
- 1 C Dried Cranberries
- 1 C Honey or Maple Glazed Pecans
- Rotisserie Chicken, shredded
- Apple Cider Vinaigrette
Instructions
Toss all ingredients together and serve. Go easy on the vinaigrette.
