
Ingredients
- 4 Chicken Breasts or 6 Thighs, skinless, boneless
- 1 T Extra Virgin Olive Oil
- 1 T Adobo Seasoning
- Rice, cooked per package instructions
Toppings
- Roasted Salsa, or your favorite jarred
- Sour Cream
- Corn & Black Bean Salsa
- 8 oz Shredded Cheese
- Shredded Iceberg Lettuce
- Fresh Guacamole
Instructions
Preheat Oven to 350 or Grill or Air Fryer (recommended, super juicy).
If using chicken breasts, pound the chicken breasts into an even thickness. No need for the thighs.
Toss Chicken with oil and Adobo Seasoning until coated.
Oven: Cook chicken for 20-30 minutes in oven until done. Grill until done. Air fry on 400 degrees for about 17 minutes. “Done” means internal temperature is 165 degrees, using a meat thermometer.
Dice chicken into bite sized pieces.
Serve chicken over rice and top as desired. You can also cut out the rice and serve this as a salad. You do you!

Ok, I had to add 4 other recipes to add this one. Whew, that was a sprint! But, I’m glad I got all of these delicious recipes added. My family loves this dinner. All the fresh ingredients and they can make their own bowl the way they like it. Who doesn’t like that kind of control over your food! You can also change out the chicken for steak or shrimp. Oh, don’t let this list of toppings limit you. Get creative…squeeze that lime, chop that cilantro, sauté those bell peppers and onions, make this your own! Don’t let me limit you, I set you free, fly little bird!!
