
Ingredients
- 2 T Extra Virgin Olive Oil
- 3 Lg Sweet Potatoes, peeled and cut into bite size pieces
- 1 small Onion, diced
- 2 Garlic cloves, minced
- 1 tsp Chili Powder
- 1 tsp Ground Cumin
- 1 tsp Dried Oregano
- 1 tsp Salt
- ½ tsp Ground Black Pepper
Instructions
Preheat oven to 350
In a large bowl or gallon Ziploc bag, combine all ingredients and stir or shake until the potatoes are coated.
Spray a large baking sheet with non stick cooking spray and then pour the potatoes and spread out evenly.
Bake in the oven for about 45 minutes or until the potatoes are soft and slightly brown on the edges.
