
Ingredients
- 4 Chicken Breasts
- Jerk Seasoning, enough to coat chicken.
- Mango Salsa
- Rice for Serving
Instructions
Preheat oven to 400 degrees.
Pound chicken until it is the same thickness for even cooking.
Salt and the cover the chicken with the Jerk Seasoning. The seasoning has some spice to it, so cover to your spice level.
Place chicken on a roasting rack in a sheet pan. Roast until the internal temperature reaches 165 degrees, about 20-25 minutes.
Note: I have a flat air fryer and air fry the chicken on 400 degrees for 17 minutes and it comes out juicy and perfect every time. Unsure how this would work in a basked air fryer. Also, if your stove has an air fryer setting, use that.
Serving Options
- Serve topped with the mango salsa alongside rice.
- Tacos are great too. Fill street taco sized flour tortillas with sliced jerk chicken and top with the mango salsa.

This is one of my daughter’s favorite chicken dishes. She won’t eat the mango salsa and she puts soy sauce on her rice…But, she likes what she likes and she loves this chicken.
