
Ingredients:
- 2 T Toasted Sesame Oil
- 2 lg Shallots or 1/2 small Red Onion, thinly sliced
- 2 cloves Garlic, minced
- 1 1/2 T Grated Ginger
- 1 tsp Brown Sugar
- 5oz Baby Bella Mushrooms, sliced
- 1/4 C Soy Sauce
- 4 C Chicken Stock (not broth)
- 8oz Frozen Mini Dumplings, Pork & Veggie or Chicken & Veggie
- 1/2 C Green Onion, sliced
- 1/2 tsp Red Pepper Flakes
Instructions:
Heat the oil in a large pot over medium heat. When heated, add the shallot (or onion) and sauté until softened.
Stir in garlic, ginger, brown sugar, red pepper flakes & mushrooms. Cook for until mushrooms are softened.
Deglaze the pan with the soy sauce, then add the chicken stock. Bring to a boil and add the frozen dumplings. Boil for the amount of time on the dumpling package.
Remove from heat and stir in green onions.
Toppings:
- Thin sliced air fried chicken breast or thighs, marinated in Soy Sauce and Garlic Chili Paste. (If using breasts, pound out until even thickness.) (Air frying, 400 degrees for 17 minutes)
- Shredded Cabbage, this adds a nice crunch to the soup and a veggie component.
- For some extra spice, add some Garlic Chili Paste.
- Boiled egg, cut in half or quarters.
- Fried wonton strips.

We went to an amazing ramen restaurant here in Nashville. Otaku, you should try it!! My daughter fell IN LOVE with the ramen and broth. She talked about it for WEEKS and salivates whenever she hears Otaku. I, by no means want to elude that this recipe is on the same level, but I wanted to figure out a way to cook something at home that caused the same reaction from my daughter. But, I needed to be able to do this on a weeknight after working all day. Mission accomplished! Her eyes light up whenever this is on the menu and I can throw it together for dinner at night. I typically double the recipe for left overs. My daughter would be disappointed (I would get the side eye that only a teenage girl can produce) if I didn’t have leftovers.
