
Ingredients
2 Cups Heavy Whipping Cream
5.7oz Instant Vanilla Pudding
2 Cups Whole Milk
1 can Sweetened Condensed Milk
2 T Mexican Vanilla
1 Box Nilla Wafers
7 Bananas, sliced
Instructions
In a stand mixer or a handheld mixer, mix whipping cream until soft peaks form. Set aside.
In another bowl, mix the pudding mix with the milk until fully combined and starting to thicken.
Add the sweetened condensed milk and vanilla, mix until fully combined.
Fold the whipping cream and pudding mixture together until fully combined.
Crush about 10 of the Nilla wafers and fold the rest into the pudding and cream mixture until fully combined.
Fold bananas into the pudding mixture until, guess what…fully combined.
Put into a serving dish, sprinkle with crushed Nilla wafers.
Cover and store in the refrigerator. For the wafers to soften, it will need to be refrigerated for at least 6 hours, overnight is best.

Before we got married, my husband had a second job delivering pizza. On a delivery he noticed the group had instruments and were setting up to play together. My husband, a musician, asked them what they were doing. The guy told him they got together every week for a bluegrass jam at his house. My husband, who doesn’t have a filter asked him if he could join them. The guy said yes! Keep in mind, all of these guys are in their 70’s and my husband, at the time was in his late 30’s. The things my husband can get into… Well, every week they do a small potluck and bring different dishes. Have a meal together and then play some of the best bluegrass I’ve ever heard. I’m from Nashville, I know good music when I hear it. Sometimes wives would come and join in the fun and bring their specialty dish. One of the ladies would bring banana pudding and everyone raved about it. After a few weeks, I asked her for the recipe. She graciously shared it with me! Well, the above recipe is the exact one she shared with me with 2 important changes. She used Cool Whip…I don’t like Cool Whip. So, I changed that to heavy whipping cream. She used a standard vanilla, I haven’t used regular vanilla in over a decade. Please take this next statement seriously. Mexican Vanilla makes a difference. Now, repeat that and never use regular vanilla again…in ANYTHING! Switch to Mexican Vanilla, you will thank me forever and always!
