Ingredients
- 1 Lg Green Cabbage Head
- 3 T Butter (rich flavor) or Olive Oil
- 1 tsp Garlic Powder
- 1 tsp Smoked Paprika
- 1/2 tsp Onion Powder
- 1/2 tsp Dried Thyme
- 1 tsp Salt
- 1/2 tsp Black Pepper
- 1/4 tsp Red Pepper Flakes
- Extra Butter (Optional)

Instructions
- Preheat Oven to 400 degrees F
- Line 2 baking sheets with Parchment or grease to prevent sticking
- Remove loose or wilted leaves from Cabbage
- Cut in half through the middle of the core, then cut each in half through the middle of the core, then cut each of those in half through the middle of the core. The core will help keep the pieces together. But, if they are falling apart a bit, that’s ok.
- Use a spatula to move each wedge to the baking dish. Spread them at least an inch apart so that they will roast and not steam.
- Add the remainder of the ingredients (except the Extra Butter) to a microwave safe dish. Heat in the microwave for 30 seconds. If butter isn’t completely melted, set for another 20 seconds. Once melted, stir the butter and spices together.
- Brush the butter, spice mix onto each wedge, completely covering with at thin layer.
- Sprinkle with just bit more salt to taste.
- If you are feeling decadent, slice a small piece of butter and place it on top of each wedge. This is not necessary but will make the dish rich.
- Bake in the over for 35 – 40 minutes until soft and some of the edges are browned.
- For serving, you can leave them in the wedges or you can toss them together. Either way is delicious.

We were having some friends over, grilling, laughing, playing music. (I don’t play…I listen…that is a skill that I have perfected over the years and I’m a professional music listener. And, if it is good, I will offer compliments or sing along. If it is not good…well, I’m southern, so I say nothing, just nod and smile. I’m a very good listener, my skill is appreciated, people invite me to things.) Ok so two ladies walk into a dinner party. One Irish and the other German…a cabbage side dish was the only logical option here. There is a joke in there and I’ll find it one day. Anyway, we had grilled pork tenderloin, super creamy mashed potatoes, a smokey salad, rolls and this cabbage. The cabbage got more compliments than anything else. The humble cabbage was the star of the BBQ…now, that is a story to tell!!
