Salted Caramel Cookies

Ingredients

  • 1 Cup Butter, Softened
  • 1 Cup White Sugar
  • 1 Cup Packed Brown Sugar
  • 2 Eggs
  • 2 tsp Vanilla Extract
  • 3 Cups All Purpose Flour
  • 1 tsp Baking Soda
  • 2 tsp Hot Water
  • ½ tsp Salt
  • 11 oz Bag Caramel Bits
  • Flaked Salt

Instructions

Preheat over to 350 degrees F.

Cream together the butter, white sugar and brown sugar until smooth.

Beat in the eggs one at a time, then stir in the vanilla.

Dissolve baking soda in hot water. Add to batter along with ½ tsp salt. Stir in flour.

Stir in caramel bits.

Drop by large spoonful onto greased or parchment lined pans.

Bake for about 10 minutes in the preheated oven or until the edges are nicely browned.

Immediately after taking out of the oven, sprinkle each cooking with flaked salt.

Cool on wire racks.

I found a chocolate chip recipe YEARS ago. It was so good. They have cooked edges and if you eat them right out of the oven (which we do), the centers are like cookie dough lava and it is amazing!! In case this isn’t obvious, blow on them a bit before eating, otherwise, the lava is real. After they cool, the center finishes cooking and it is the best cooking I have ever eaten. Anyway, I made these and my daughter loved them and my husband said you should add toffee to the mix, which I did the next time. Another winner in our house. After that, I found Caramel bits at the grocery. Not caramel chips, but actual balls of chewy caramel. I, of course grabbed the bag and when I got home, Salted Caramel Cookies were born. My daughter fell IN LOVE with these. If I’m making cookies, these are the ones she wants. The kids in the youth group at church are standing at the table when I bring them in for potlucks. I have to make a double batch of these so that they aren’t gone before the meal starts. The little caramel bits create this amazing chew to the cookie and the flake salt on top….YUM!!!
