
Ingredients
- 5 Roma Tomatoes, diced (recommend removing the seeds)
- 4 Jalapeños, seeds removed, diced small
- 1 small Red Onion, diced
- 3/4 C Cilantro, chopped
- Juice of 1 Lime
- 1/2 tsp Salt
Instructions
Mix all ingredients together. Taste and adjust salt to your liking.
This is best if you let it sit in the fridge for about 2-3 hours so that the flavors combine.

I have tried buying fresh pico in the produce department in the store. I’ll even still buy it, thinking it will make prep easier. The problem…I have to always doctor it to make it truly tasty. Why, oh, why… So, this is my go-to pico recipe. Even my husband who HATE tomatoes will add this to the different Tex-Mex dishes that I make. Because tomatoes, jalapeños and onions come in all shapes and sizes…the trick is to have an even amount of those and the cilantro. Oh, and salt is key. It really does bring out the flavor of all of these fresh ingredients and the smile on your face and harmony in your mouth will be proof enough of that. Don’t do what I do and buy pre-made pico…just to the right thing the first time! We’ll make a pact together…no more premade pico, we will no longer dishonor our kitchens or our mouths. We choose the good stuff!!
