Easy Spicy Chicken Pad Thai

Ingredients

  • 8oz Flat Rice Noodles
  • 6 T Canola/Vegetable Oil
  • 1 lb Chicken Breasts, salted
  • 1 Red Bell Pepper, thinly sliced
  • 1 ½ C Carrots, matchstick
  • 4 Garlic Cloves, minced
  • 2 Eggs, beaten
  • 2 Green Onion, chopped
  • ½ C Peanuts, salted, roasted, roughly chopped
  • 4 T Cilantro Leaves, chopped

For the Sauce

  • ¼ C Packed Brown Sugar
  • ¼ C Soy Sauce
  • 2 T Lime Juice
  • 2 T Rice Wine Vinegar
  • 2 T Creamy Peanut Butter
  • 2 T Siracha Sauce
  • ½ tsp Ground Ginger
  • ¼ tsp Black Pepper

Instructions

Pound chicken breasts to even the thickness. Salt both sides. Place in air fryer, 400 degrees, 17 minutes.

Prepare rice noodles according to package directions. Rinse noodles in cold water, drain, and toss in with a little canola oil. Set aside.

Add all of the sauce ingredients to a medium mixing bowl. Whisk together and set aside.

Heat 2 tablespoons canola oil over in a skillet and heat over medium-high heat. Add bell peppers and sauté 1 minute. Add carrots and garlic and sauté 1 additional minute. Reduce heat to medium and pour beaten egg over vegetables and cook, stirring constantly, just until scrambled.

Add sauce and noodles and increase heat to medium-high. Toss until evenly combined and continue to stir and cook for 1-2 minutes, taking care not to let the noodles overcook.

Add green onions and peanuts, and heat through.

Slice chicken breast into thin strips and add to the noodle mixture.

Taste and add one additional seasoning as necessary. You can add more Sriracha if you want it spicier, soy sauce for extra salty flavor or a squeeze of lime for brightness. Top with cilantro and serve.

Ahhh, Pad Thai, this is love! I had this for the first time about 5 years ago and had only had it in restaurants. It seemed too intimidating to make at home. Plus, I wasn’t sure I could get to that flavor that I love. But, just a few weeks ago, I took a chance. Found a base recipe and adjusted to get to where I loved my home cooked version! It isn’t exactly like the one I get in the restaurant, but it triggered that love response, so I’ll take it! Now, I’ll only go to the restaurant if I want someone else to cook and serve my food…basically when I need a day off from dinner at home. When I served it to my family, my daughter really enjoyed it. My husband did too, but was quick to tell me he didn’t like the chopped peanuts. So, noted for the future…if he’s lucky enough for me to make it again for him! Of course he’s lucky, I love the guy!
