
Ingredients
- ½ C Ketchup
- 1 ½ T Sauce from the can of Chipotle in Adobo
- 1 lb Ground Sirloin
- ¾ C Onion, finely diced
- ¼ C Plain Breadcrumbs
- ½ tsp Salt
- 1 Egg, lightly beaten
Instructions
Preheat oven to 400
Combine ketchup and chipotle sauce, stirring well to combine. Reserve about 2-3 T of the ketchup mixture.
Add the remaining ketchup mixture and the rest of the ingredients in a bowl and combine well.
Divide beef into 4 equal portions
Shape each portion into a small loaf (4”x2”)
Spray a sheet pan and place the loaves on pan.
Spread the reserved ketchup mixture evenly on top of the 4 loaves.
Bake in the oven for 25 minutes.
Serving Options
- Serve with Roasted Savory Sweet Potatoes and Southern Green Beans.

I like a little spice in my life. So, I took a very basic meatloaf recipe and married that with my love of spice and Chipotle Mini Meatloaves were born. They have a nice spice to them so they pair really well with the sweet potatoes. Enjoy! Hmm, this is on my dinner list for this week, so I know I will! If you don’t like spice, this may be too much for you. But, that is ok. Just replace the Chipotle with Dijon mustard. Add a teaspoon of Italian Seasoning and you’ve got a delicious mini meatloaf. There is no judgement here, it is a safe space! Spice or not, you gotta love what you cook!
