
Ingredients
Muffins
- 1 1/2 C All Purpose Flour
- 3/4 C Sugar
- 1/2 tsp Salt
- 2 tsp Baking Powder
- 1/3 C Vegetable Oil
- 1 lg Egg
- 1/3 C Milk
- 1 tsp Mexican Vanilla
- 1 C Any Berry or Mix of Berries, Fresh
Streusel
- 1/2 C Brown Sugar, packed
- 1/3 C All Purpose Flour
- 1/4 C Butter, melted
- 1 1/2 tsp Ground Cinnamon
Instructions
Preheat oven to 400 degrees.
Line muffin tin with liners. This will make about 12 muffins.
Combine 1 ½ C flour, white sugar, salt and baking powder.
Place vegetable oil into a 1 cup measuring cup: add the egg and enough milk to fill the cup.
Mix in vanilla
Mix liquid ingredients with the flour mixture. Then, fold in the berries.
Fill muffin cups 3/4 full.
Mix brown sugar, 1/3 cup flour, melted butter and cinnamon with fork.
Use fingers to break up crumble on the top of each muffin.
Bake for 20-25 minutes until toothpick comes out clean.
Alternatives (same measurement swap)
- Replace the berries with Chocolate Chips, my daughter’s favorite!
- You can sauté diced apples and use those in place of the berries.
- Mashed banana would be delicious as well.

Oh my goodness, these muffins! I could stop with just that statement. Its the streusel. That is where the magic of these muffins lives. It is thick (make sure you use it all!), sweet, decadent…all of the things!
